Just extend the VIF configuration:
vif = [ 'mac=00:16:3e:00:01:3c, bridge=eth0',
          ‘mac=00:16:3e:00:01:3d, bridge=eth1’,
          ... ]
 
I did run into a limit at 8 vif interfaces but there are probably ways to get
past that if you needed.

I''m not sure about xen.org''s or latest pv_ops kernel default limit though.
