See ?barplot and pay attention to the 'height' and 'beside'
arguments.
They produce very nice stacked plots.

Some of the examples using the VA deaths dataset displays stacked plots.

x2 <- do.call("rbind", split(x$Count, x$CAT1))
dimnames(x2)[[2]] <- letters[1:3]

barplot(x2, legend = TRUE)
