I just make my own kernel, with the drivers for the root filesystem and the Xen domU block devices built in. My suggestion : DON''T. Try using virt-manager (easiest when you use RHEL/Centos dom0) or whatever Xen GUI is available on your system. After you understand how it works, THEN you can try creating your own root filesystem or use ones from other sources (e.g. jailtime.org, whatever).
