I get usually Xvnc server as xinetd service running at DomU. Then any your GUI apps becomes a client of X-Server running at Dom0 via vncviewer connection. You can use a nx server, there is a free edition. It works over ssh and it''s faster than vnc. You can also use session (for kde and gnome). the installation is not difficult (for me only install three packets!) If you need to run GUI applications for administration for example, you just need the X client libraries in the domU and ssh X redirection + X server on the origin (your workstations?). Would be useful if you explain yourself more...
