Xen for ia64 is available and working fine. If you want to run HVM domains you need the latest Itanium2 (Montecito) , otherwise any Itanium2 should be OK. For a starter, you can look up xen-wiki page , http://wiki.xensource.com/xenwiki/HelpOnInstalling/XenOnia64 or, you can always ask xen-ia64-devel mailing list for further help.
