Rails - Oct 2006 - how can I set the first value of a select to something?

how can I set the first value of a select to something? like
:include_blank=> true but I want it to be <option
value="all">All</option>

I use select(object, method, choices, options = {}, html_options = {})
but I wouldn''t mind using collection_select
