Is it as simple as purchasing Quicktime Pro and then having it record your actions, or is there another piece involved with this? Snapz Pro is, to my knowledge, the best software for this purpose, and I also believe the Rails demos made on a Mac uses it. On Windows, I use a free program called WINK to do these in Flash. Wink is pretty easy to use and you can use it to easily annotate your screeens. http://www.debugmode.com/wink/ There''s also Camtasia Studio which is not free, but we use that here at work quite often. It makes Windows Media files by default, but last time I checked, it can make any file format you want, including a nice Flash version with play / stop and a seeking bar.
