Well, commercial and government organisations tend not to leave as much
literature evidence of what they are using.
However:
1) The division of mathematical and information sciences of the
Australian government research organisation CSIRO clearly makes
some use of R since they have published an R package.
2) The proceedings of the DSC 2001 conference, linked from the
`Publications' page at the R homepage show that R is used (as well as
being partly developed) at Bell Labs.
3) Questions on the R mailing list and bug submissions suggest that it is
used at a number of corporations, eg Merck and Pfizer, but we don't know
how much or by how many people.
4) The website http://www.medepi.org shows that the San Francisco
Department of Public Health uses R.
I know of other uses, but I don't know of literature evidence of them.
