1.0-stable isn't actually changing that frequently, it's just the
tarball is built every night. See
http://www.dovecot.org/nightly/stable/ChangeLog for the true picture.
We're going with 1.0-stable for now, and if 1.0-testXX becomes
"-stable2" or "-rc", we might switch to that (timescale is
over the
summer, and we're using mbox).
