I'm trying to set the default program for some of my files to open in a windows program in Wine. I've had a look in the documentation, Wiki and here for help but didn't see anything. Any help would be warmly welcomed

You set filetype associations in your file manager, the same way you would with native apps. Ask your distro if you don't know how.
