To drive a microphone for interviews and so on, Minidisc really is
your best bet. Many of them will even phantom-power electret condenser
microphones and so on.

I have yet to find a portable minidisc recorder that *outputs* in
digital format - many have digital optical inputs. I'd like to keep
things all-digital instead of "playing" the sound into my analog sound
card. Anyone encounter such a beast?

Also, what good is a recording minidisc system without this (other than
recording something where fidelity and noise are less important), or
where all you plan on doing is performing playback on a minidisc system?
