I would rather not specify the names of mount points as I use different and
random mount names specified at the encoder. So there is no global method to
specify utf-8. I thought I read that was the default character encoding for
Icecast.

There is the mount specific charset option, which you can to use to specify the
encoding for the
legacy metadata.
Playing the stream in Winamp correctly displays Chinese characters.
Is this not supported?
