CentOS - Feb 2019 - time to say good-bye to win 7 / printer is the last blocker

Hallo,
the laptop of my wife is the last Win7 system in my network.
My question:
I need a well supported printer (MFC) with network interface, if possible with
colour printing.

I like the OKI MFC devices. For Printing they provide a PPD file which is
all you need on Linux. For copying and scanning I do it directly on the
device and scans are sent via FTP to my server. They also provide some
scanning software but I never used it. So it's not very tightly integrated
but I like keeping things simple and not to have lot's of dependencies.

I know this is a bit controversial since they are a bit Marmite in
nature, but I use HP devices.  They are well supported using the most
recent hplip package - that also provides a scan to desktop
functionality, but I tend to use the sane packages because they better
suit how I work.

My recent experience is that Cannon is pretty useless.  You apparently
need the latest sane, which is more recent that CentOS provides.  I
suppose they are good as door stops.

I've used Samsung in the past and Linux support is poor, but just usable.

My latest is an HP MFP M281 which so far seems to perform well and the
control interface works with Linux.  I control it from the main CentOS
machine, but it is also directly access from other distros and from
Win6/Win7 laptops.

Same here .. using HP officejet Pro 6960 on all the CentOS 7 nodes here .
The only potential issue (what I had to do for that model) is that I
needed to grab the newer hplip packages from upstream
(https://developers.hp.com/hp-linux-imaging-and-printing), as the one
from base repo was too old to support that model

Everything works, including scanning through the network (xsane, or
simplescan which does its job)

I have a Brother black-and-white printer that is good for printing
black-and-white text pages, however, I have not figured out how to configure the
printer driver so it does not dither(?) color text etc as that comes out very,
very poorly... You may want to keep this in mind.

If anyone can suggest what configuration change I need to make, it would greatly
appreciated! It does not seem that I can change anything on the printer.

Brother printers.  You will likely need to install the drivers from the 
brother website, but my experience with them have been exemplary.  My 
current printer is an MFC-J4620DW and I wouldn't trade it for the world.

e.g. my HP CP1515n is such one
