Please can you also try an install with: acpi=1 apic=1 pae=1 vcpus=1 acpi=1 apic=1 pae=0 vcpus=2 acpi=0 apic=1 pae=1 vcpus=2 debug=y builds of xen may give us a little more idea of what is going on.
