SMB2 & Mac OSX
Have a WD MyCloud (v.1) NAS running “latest” (12Mar19) f/w which runs linux 3.2.26 & smbd 4.3.11 (yeah…both are EOL). vfs fruit, catia & streams_xattr are included modules.
Have tweaked server smb.conf for Mac OSX (see my post for the Mac OSX-related Globals https://community.wd.com/t/solved-tweaking-samba-smb2-for-mac-androids/236189 ), however, although I was able to reduce the SMB2

A couple of questions about the above:
1. In their respective man pages, both refer to "NTFS alternate data streams?, however they are not limited to just NTFS ADS are they? Other file systems may also use ADS (such as Mac OS?s various fs)
2. What is the essential differences and similarities between the two? From the man pages it appears that:

Why do you want TM to work over samba? Not sure it is supported completely by Apple although they did have developer documentation on it at one time:

I notice the Configure Samba to Work Better with Mac OS X has been radically shortened?not sure why, but you may want to look at my original 22 Apr 2019 version in the history.
You may want to put vfs objects in Global. Note in the vfs_fruit man page: Be careful when mixing shares with and without vfs_fruit. OS X clients negotiate SMB2 AAPL protocol extensions on the first tcon, so mixing shares

Defaults for Parameters in vfs_fruit
From the vfs_fruit man pages (current & past), it is not clear what parameters, if any, are enabled by default if only the vfs objects = fruit parameter is set.
In another thread I started, vfs objects does not appear to be documented in a man page, however, I assume it loads modules, but does not necessarily enable them.
For example:

have you run testparm -s on your server?
You don?t show it in your smb.conf, but I assume you have vfs objects = catia fruit streams_xattr there as well as in your [data] share. If you don?t, you should since you have various fruit: parameters in the [global].
The SMB conversation in your Wireshark pcap would be easier to read if you filter on ?smb2? :-)

On your Samba server, check build options: #: smbd -b - look for vfs_catia, vfs_fruit, vfs_streams_xattr modules.

vfs objects
Is the ?important" vfs objects parameter documented in a man page anywhere? It appears in the man pages of several vfs modules, but never fully documented that I could find. Mac OS and interpretation of @ in a username. Ex user@mds.xyz doesn't work on Mac OS but does on Win 10
Am I missing something? I don?t see where you are using the ?@? symbol anywhere.
Mac is probably interpreting the parameters ?valid users? and ?write list" (correctly, I think ;-) as a LIST of 3 users: joe, at, mds.xyz or bob, at, mds.xyz.

Clients send tons of Notiftication requests
I have been trying to help Luca on the QNAP forum since I have the same NAS. It reports smbd version 4.7.12. I have not had any issues, but I am in a Mac/Linux environment only.
In Luca?s case, he is using NFS (not sure what version) on his Mac and I initially thought that maybe it was initiating change notifications somehow. Possible?

OS X client symlinks
When you say “real symlinks on OSX” do you mean an “alias” that Finder would create? Or a Unix-type symlink using the “ ln -s file link” command in Terminal? A Finder alias is not the same as a Unix-type symlink.
My NAS runs Debian Linux with version 4.3.11 of smbd; my clients are all OSX Mojave.
