I would very much appreciate some help since I get one step ahead and
two backwardswith my installation.
I am using usernames not (not) in the form of user at domain.tld. Simply a
string.
The error I get.

Activate mail_debug=yes in your config and have a look in your logfile. What does "doveadm user avadmin at av.loc" looks like?
