You should set 'mail_debug = yes' in dovecot.conf, and you will find  
out why in its log file.

but on my /var/dovecot-mail have following directory created:

-domain
-domain.
-domain.es (only this is correct)
-DOMAIN.ES

Why is this happening?

Latter two: use %Ld (lower-case domain)
s. http://wiki.dovecot.org/Variables sec. Modifiers

First two: someone successfully logged in or got a mail delivered using 
"user at domain" (no .es) and "user at domain." (no es).

Follow Zhang's advice to get more info.
