Well, the Dovecot server won't do this for you.  But the Dovecot LDA can do
it,
if you write Sieve scripts to do it.  There's more details in the Wiki, or
you
could look up the Sieve RFC.

dovecot and sort my mail into /home/dlw/Mail/file1, file2 etc....  ?

At least you must be knowing the difference between an MTA, an MDA, a
POP3/IMAP server, a MuA and filters, like procmail, yes?

Once you get what the gist of the above, you will realize why noone
responded ;)
