One could try to build the rawhide version: http://download.fedora.redhat.com/pub/fedora/linux/development/source/SRPMS/wine-1.1.10-1.fc11.src.rpm By the time you satisfied all the dependencies I expect you'd have something closer to rawhide than CentOS.
