[Samba] is it possible to define some action to do if a user log's into a share?

You can certainly caputure the user coming into the share with a preexec command. I suppose a postexec could capture when he leaves. I once seen a setup where the log file was defined with one of the % vars. The log file was seperate for each workstation. Im sure there are other vars that you can use.
