This general area of science is referred to as "source coding". This
is usually taught in electrical and communications
engineering classes. To understand advanced concepts in source coding you will
need to learn about
statistics/stochastics and obtain some background in signal processing and
digital filters. This is no simple stuff,
unfortunately.
