Xen, NFS performance, rsize, wsize and MTU

Installing redhat 7.2 under debian
Hello, I want to install xen to run old versions of redhat (7.2,7.3 etc) on my debian sarge machine. Is it actually possible to use xen like a virtual machine to do this ?
