...all kinds of questions that aren't answered such as: Should
variables be replaced recursively? How do you escape %{..} if you
don't want it to be replaced? Should we allow loops or similar
constructs? Existing template systems solve these kinds of problems
already.

Yes, however they are much more complex, and with a number of features
like conditionals, filters, loops, etc. Considering this is needed so
far for the file paths of disks in -o json, IMHO plain variables are
enough.

This regex allows anything as variables for two reasons:
1) we do not miss any variable...

[PATCH 0/3] RFC: v2v: add -o json output mode
This series adds a new output mode for virt-v2v, called -o json.
It produces local files, just like -o local, although the metadata
produced is a JSON file with data that v2v collected in the conversion
process. This can be useful for converting to unsupported destinations,
still based on QEMU/KVM.
In addition to a simple different metadata, it offers a way to relocate
the disks, with
