How to add static routes?
...rking, the host could redirect the IP traffic
on behalf of the guests, but i'd like to avoid the resulting extra hop
and the flood of ICMP redirects.
Please advise. Cheers /nils.

...eal" correct one. Imho.
Option 2, and options 3 are masking a configuration errors.
If you want to use dhcp with servers, sure possible, no problem at all, but not recommended.
Now have a look at : /etc/dhcp/dhclient.conf
That shows, something like this ( the default on debian )
option rfc3442-classless-static-routes code 121 = array of unsigned integer 8;
send host-name = gethostname();
request subnet-mask, broadcast-address, time-offset, routers,
domain-name, domain-name-servers, domain-search, host-name,
dhcp6.name-servers, dhcp6.domain-search, dhcp6.fqdn, dhcp6.sntp-...
