Thunderbird and hanging "Copying message to Sent folder..."
...ppears
to go away.
I can't tell for sure, but Thunderbird seems to send the copy
using a different connection than the one used for sending the
message itself if you set things up in this way.
The email still gets copied to the same Sent folder, so there's
no change there.

Dovecot and SSL certificates
...Ideally, we'd like to only accept login requests from users which
have a valid certificate signed by our CA. Even better would be
an approach such as the one taken by Postfix where you have
to provide a list of valid MD5 hash sums for the users you'd
like to accept.
