I think you mean RSAT.
What do you mean with "Win 10, no RSAT"? RSAT is available for Win10:

Creating new users via ADUC under Windows10 still gives us users with
missing attributes like uidNumber etc
As far as I understand, this simply doesn't work with Win10, related to
https://wiki.samba.org/index.php/Installing_RSAT#Missing_Unix_Attributes_tab_in_ADUC_on_Windows_10_and_Windows_Server_2016

What are my options here?
So far we created users on the shell, via samba-tool. Now there is a
junior admin on site and it would be nice to be able to use ADUC as well.
Is it possible/reasonable to fiddle with the ID ma...

How to learn abut what is in the samba ldap directory
I once upon a time worked with DAP and watched LDAP being created as
something that actually could work...
Showing my age here.
What little I have done with LDAP has been very clearly delineated so
that I knew what was being done. Here, with Samba, and I guess
actually, it is AD, I have not found that. Yet. But there are always
tools.
So I am looking at: phpLDAPadmin
I know these

IDMAP + GETENT
...sing ADUC, but Unix attributes is not enabled to insert GID.

If you are using ADUC on windows 10, there is no Unix Attributes tab,
if you are using any other version of windows, you need to install
IDMU, see here:
https://wiki.samba.org/index.php/Installing_RSAT
This does depend on you adding the option '--use-rfc2307' to the
provision command, but if you didn't, you can add it later, see here:
https://wiki.samba.org/index.php/Setting_up_RFC2307_in_AD

Assuming that you have an AD domain, you would primarily manage the domain
via Microsoft's Remove Server Administration Tools i.e. Active Directory
Users and Computers, DNS Manager, etc.
https://wiki.samba.org/index.php/Installing_RSAT
Computer Management is only at a local level.

If you goto a user his unix tap, and select you NIX domain, the first next uid is used.

Yes, but have you given Domain Users a gidNumber ???

If you haven't given Domain Users a gidNumber and are using Samba
4.6.x, you can follow the info here:

Samba with AD : SID rejected
Hello,
I'm building a samba share with Active Directory authentication, based
on samba wiki documentation.
I'm using Samba Version 4.7.6-Ubuntu (Ubuntu 18.04) and Windows Server 2019.
I added manually Unix fields in my AD users attributes (based on
https://wiki.samba.org/index.php/Installing_RSAT#Missing_Unix_Attributes_tab_in_ADUC_on_Windows_10_and_Windows_Server_2016)
I joined correctly the domain, I see my computer in my AD.
The problem is I can't list users/groups with getent command or get some
info with wbinfo.
The commands that work :
wbinfo -t returns "checking the trust...
