What about, from terminal, doing something like
XMODIFIERS=@im=fcitx LC_CTYPE=zh_TW.Big5 GTK_IM_MODULE=fcitx firefox
(the zh_TW.Big5 is just a guess, one that I saw googling lc_ctype for
Chinese.).
These are just guesses on my part. I've not had a similar issue, save for
the firefox thing on FreeBSD that I mentioned.

I am using Mate. When in a terminal window I run
XMODIFIERS=@im=fcitx LC_CTYPE=zh_CN.GB18030 GTK_IM_MODULE=fcitx geany
Geany seems work as expected, i.e., I can switch between the two western keyboards and also activate pinyin using Ctrl-Space. There does seem to be some bug in fcitx however in that sometimes switching in and out of pinyin also changes the keyboards and the first time I am in geany la...

Wonky Firefox 68.0.1esr upgrade
I just applied a bunch of updates to my CentOS 7 system yesterday, one
of which was a Firefox update to 68.0.1esr.
Now when I bring up sites I would log in to -- my bank, credit cards,
etc., the Password box is wonky and shakes and doesn't display
successive dots? for characters I type, nor does it accept what I type.
My work around currently is to type the password first, then my userid

Installing support for Chinese text in Centos 7
...file, but regardless, glad you
found it--there may be differences between the Chinese and Japanese
version.
As for libreoffice, you might look under tools, options, languages and see
what the default Asian is.
If that doesn't do it try something like
XMODIFIERS=@im=fcitx LC_CTYPE=en_US.UTF-8 GTK_IM_MODULE=fcitx libreoffice
and see if that works.
(I don't use the CentOS package for libreoffice, I get the latest from
their site. )
