You must first now if samba is starting from inetd or is running as a
standalone daemon (what I suggest you in your case)
you can change how it starts by running sambaconfig (as root user)
then samba will automatically run at the machines starts
you can start stop manually the daemon by running
/etc/init.d/samba stop
execute /etc/init.d/samba without parameters and you will see other
options...

See the sample smb.conf in /etc/samba
There is a package named swat that allow you to configure this an other
options via a Web interface
