the exim part is easy:
1 setup new box
2 configure old box to deliver everything to new box by using a manualroute
router
3 switch MX pointers
4 Flush queue on old box (exim -qff)
5 Once the DNS change has propagated, switch off old box.
For courier I would expect to add something like this in between 1 and 2.
1.1 Disable pop/imap logins on oldbox
1.2 configure old box to do not do any deliveries. (hold_domains = *)
1.3 copy user mailboxes to new box
1.4 enable pop/imap logins on new box, point users there.
