Chances are the dock all plugs into DP-1 with a DP-MST hub with passive (or even active) adapters for DVI and HDMI. Unfortunately nouveau does not at present support MST. This made try one more thing I hadn't checked before: use one output on the dock and another directly on the notebook. And this does work, so I get eDP-1, DP-1 and DP-2 now.
