To get an idea of the steps involved to rebuild the necessary packages, take a look here (based upon the original 8.0 release, but same principles apply): https://wiki.centos.org/About/Building_8 It's impossible for anyone to give any kind of detailed answer to your question as no one knows how long it will take to complete the required steps, but realistically it's likely to be anywhere from a few weeks to a few months depending how things go.
