Have you tried smbcmp? I would suggest setting up a samba server and
trying out connecting with different options (signing, encryption, smb
versions, ...) while capturing so that you can get a feel of what shows
up in the diff, what is useful and what is not.
Right now smbcmp uses tshark plaintext output. The first step would be
to switch to the xml output so that we can have a proper data structure
of the dissected output. From there we can think about which fields are
relevant to show in the diff.
