Phones do not nessisarily sync with your Asterisk server. Depends on the phone. For example, Snom allows you to specify an NTP server in their setup either external or internal. I have a crappy Grandstram that requires you to manually enter the time. We are using Cisco7940 phones. The settings that are assigned do show Eastern New York GMT. I will see if I can find anything else in the documentation.
