Same problem here. Using Ubuntu 9.04 64bit, Brazilian portuguese. Can type deadkeys everywhere except on wine applications(notepad, office 2007). I'm using scim/scim-bridge(portuguese/japanese) too and works on native linux GTK/QT applications, but doesn't work on wine..... just an extra information.
